Preheat oven to 325°F.<br />2. Mix cracker crumbs, 3 Tbsp. sugar and butter; press firmly onto bottom of pan. Bake 10 minutes.<br />3. Beat cream cheese and 3/4 cup sugar with electric mixer on medium until blended well. Add eggs one at a time, mixing on low speed after each addition until just blended. Add vanilla; mix well.<br />4. Pour over crust.<br />5. Bake 50 to 55 minutes or until center is almost set. Refrigerate at least 4 hours.
