INGREDIENTS
For variety try adding:
- 1/2 cup of raisins or chopped pecans or walnuts to the cake batter
- 4 eggs
- 1 c. salad oil
- 2 c. canned pumpkin
- 2 c. all purpose flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 c. butter, softened
- 1 (8 oz.) pkg. cream cheese
- 1 (1 lb.) box powdered sugar
- 2 tsp. vanilla
Combine all cake ingredients in a large mixing bowl. Beat with an electric mixer until thoroughly blended. Pour batter into a buttered and floured 13"x9"x2" pan. Bake at 350 degrees for 35 to 40 minutes, or until cake tests done. Cool. Prepare Cream Cheese Icing. Combine icing ingredients in a mixing bowl. Beat with an electric mixer until smooth. Spread on cooled cake.
